The pear-type cheese from Chitaga, Colombia, being one of the products of the principle market-basket in the Province of Pamplona, N.S. Colombia, that is used in the elaboration of fast foods; this product has a light acidity, smooth texture, no holes and is easy to slice. These attributes are related directly to the physicochemical characteristics of this type of pear cheese, such as; the humidity, the fats and the pH. The objective of this investigation was evaluated through its effect on the percentage of fats and acidity found in the milk and that affect the physicochemical characteristics of the final product in this pear-type cheese from Chitaga; it is elaborated as one of the products at ‘Alimenticios Magdis’ – one of the dairy businesses in Pamplona. Five different treatments are used that vary in each one of these treatments in so far as the acidity and fats. The analysis of the statistics and collected information was determined by ANOVA with a factor of 0.05 and finding the significant difference among the treatments using three repetitions of the treatments. The conclusion was that the treatment using the raw material with 3.5% of fats and 25 degrees Thorner (oTh)) at 32 ºC with a temperature used in making ‘cuajada’ (freshly made cottage cheese); these gave the values of 51% of humidity, 24% of fats and a pH of 5.6 considering that it is a soft cheese with low fat according to the NTC 750 norms.
Resumen:
El queso pera tipo Chitagá es uno de los productos de mayor consumo en la provincia de Pamplona (N de S), principalmente para la elaboración de comidas rápidas, como sabor ligeramente acido, textura lisa, sin agujeros y fácil de tajar; dichos atributos están relacionados directamente con las características fisicoquímicas del queso pera: humedad, grasa y pH. El objetivo de esta investigación fue evaluar la influencia del porcentaje de grasa y acidez de la leche sobre las características fisicoquímicas finales del queso pera tipo Chitagá elaborado en la empresa productos Alimenticios Magdis. Se trabajaron cinco formulaciones variando en cada una de ellas los parámetros anteriormente mencionados. Las muestras fueron elaboradas en planta piloto de acuerdo con el diagrama de flujo desarrollado en la fábrica; los análisis físico-químicos % grasa, % de humedad y pH se realizaron por triplicado. El análisis estadístico de la información recolectada se determinó por ANOVA de un factor con un nivel de significancia del 0,05, hallando la diferencia significativa entre los tratamientos para tres repeticiones. Se concluyó que el tratamiento trabajado con materia prima con 3,5% de materia grasa y 25 grados Thorner (oTh)) a 32 ºC de temperatura de cuajado arrojó valores de 51% de humedad, 24% de materia grasa y un pH de 5,6 condierandose un queso blando y semi-graso de acuerdo a la norma NTC 750.
